Preparation > Australian Bread / Aussie Bread
- Mix the flours, cocoa, salt, and sugar in a large bowl;
- Dissolve the yeast in a portion of the water and wait 10 minutes;
- Add the dissolved yeast, honey, and almost all of the water;
- Mix all the ingredients until a homogeneous dough forms, adding the remaining water if necessary;
- Knead the dough for 5 minutes on low speed, 7 minutes on high speed, add the butter and knead for another 3 minutes on high speed;
- Cover the dough and let it rest at room temperature for approximately 1 hour;
- Divide the dough into 3 equal parts;
- Cover with a cloth for 15 minutes;
- Shape the 3 doughs;
- Sprinkle cornmeal over the doughs;
- Place the doughs in a shallow baking pan lined with parchment paper;
- Cover again and let rest for 2 hours;
- Preheat the oven to 180°C (350°F) 30 minutes before using it;
- Make parallel incisions in the loaves;
- Bake the loaves for approximately 25 minutes at 180°C (350°F);
- Remove from the oven and let cool for at least 30 minutes.
