Recipe > Italian Luganega Sausage with Parmesan Cheese

Luganega (or luganiga, luganica, lucanica) is a fresh Italian sausage made with pork. It is traditional in Lombardy, Veneto, and northern Italy, and is usually rolled in a spiral shape. However, the sausage originated in southern Italy, derived from the Italic tribe called Lucanians, who lived in Basilicata and Calabria in pre-Roman Italy. Lucanian soldiers spread the sausage, called lucanica, to Rome and from there to other parts of the Latin-speaking empire.
