Mititei or Mici is a traditional Romanian sausage without casing, consisting of grilled sausages made with a mixture of beef, lamb, and pork, seasoned with garlic, black pepper, thyme, coriander, anise, savory, and sometimes a touch of paprika. It is similar to ćevapi, kebapche, and other minced meat dishes common in the Balkans and the Middle East. It is usually served with mustard, french fries, and murături (pickled vegetables).

Preparation > Mititei

Grind the meat to 4mm;
Mix the seasonings;
Mix the meat with the seasoning mixture;
Mix water and baking soda;
Mix the meat and water with baking soda;
Let it rest for 12 hours in a refrigerated environment;
With damp hands or the help of a funnel, shape sausages to a size of 10cm;
Let it rest for 1 hour in a refrigerated environment;
Prepare in the oven at 190°C for approximately 15 minutes or bake on a hot grill.
