Preparation > Artisan Bacon

In a bowl, mix all the ingredients well.

Spread the mixture all over the pork belly, rubbing and massaging well so that it spreads and penetrates the meat.

Place the pork belly in a plastic bag or container with a lid and leave it in the refrigerator for 3 to 7 days, turning it occasionally so that the seasonings are distributed evenly.

After the curing time, remove the pork belly from the refrigerator and leave it at room temperature for 30 minutes.

Place it in the smoker at a temperature of 80 to 90 degrees Celsius for 4 hours. Preferably use fruit wood. But you can also use eucalyptus.

Remove it from the smoker and let it cool.

The bacon will be ready to eat. To store, vacuum pack it or wrap it in plastic wrap a few times. Store it in the refrigerator.

Bacon has a shelf life of 75 days in the refrigerator when vacuum-sealed.
